Dinner Recipe -- easy and tasty
Hi All,
I just made this last night -- was a little skeptical but omg was it ever good! Even leftovers today were yummy... I got it out of my fitness mag, changed it slightly, and thought I'd share it here with you. Enjoy!

Southwestern Chicken Stir Fry
TIME: 30 min
MAKES 4 SERVINGS
Serve this on whole wheat soft tortillas or on a bed of mixed greens (I did whole wheat soft tortillas, excellent).

1 envelope of Fajita Seasoning Mix (mix with 1/2 cup of water in bowl)
12 ounces of skinless, boneless chicken breast halves, cut into 1" cubes
light cooking spray
1 medium yellow pepper, cut into square chunks
1 small zuchinni, skin on and sliced thinly on the bias
1/2 small onion, cut into small pieces
2/3 cup of spicy salsa
1/2 cup frozen whole kernel corn
1/2 cup canned black beans, rinsed off and drained
small amount of shredded cheese, your choice, as a topping (optional)

1. Combine fajita mix with water and whisk in a medium mixing bowl. Add chicken chunks to marinade; stir to coat. Let stand at room temp. for 15 min.
2. Preheat large pan or wok, sprayed lightly with non-stick cooking spray, over medium heat. Add in peppers, zuchinni and onion; cook for 2-3 min. or until crisp/tender.
3. Spray lightly with non-stick cooking spray, a second pan and place over medium heat. Drain the marinade from your chicken and add seasoned chicken chunks to the pan. Cook and stir for 4-5 minutes, or until no longer pink. MAKE SURE CHICKEN IS THOROUGHLY COOKED.
4. Once chicken is cooked, add it to the pan with the vegetables and continue cooking over low heat. Stir in salsa, corn and beans, heating your entire mixture for 1-2 minutes.
5. Scoops some of the mixture from the pan onto a whole wheat tortilla, sprinkly LIGHTLY with shredded cheese and ENJOY!

Hey Blair,
I'm in Canada too - Ontario, to be exact.
If you go to the Taco section at the grocery store, they sell the seasoning mix in little packets by the taco shells and salsa. Just check the nutritional panels and grab the one with the least amount of sodium -- I can't remember which I bought, and (of course) it's already in the trash. :S I'll look again when I go for groceries tomorrow and will let you know.
If you guys try it out, let me know what you think. I've got a few more chicken based recipes that I'm going to make and, if they're good, I'll post 'em.

I will have a look for 'fajita' though, it might just be so that they sell it here as well -

Israel, that's pretty cool! I think you're the first person I've "met" who lives over there. So, for your diabetes, are your # translations the same as those in the USA, Canada, or do you have your own conversions? Just curious...
If you can't find the fajita seasoning mix, maybe expiriment with a different marinade -- something a wee bit spicy, not sweet. Next week, I'll try something different on my end and will let you know how it goes. And I'm making another dish tonight, if it's good, I'll post that over the weekend as well.

I’ve found some "easy and tasty" dinner recipes at http://www.lowglycemicrecipes.net(they have some good breakfast,lunch and snack recipes,too!)and they’re always adding new ones. They list carb amount,GI, calories, fat, fiber content, etc. Good site if you're looking for new ideas.
