    Low Carb Pumpkin Pie

    3 cups Spaghetti Squash
    3/4 cup cream
    3 eggs
    1 1/2 spoon splenda
    1/2 spoon nutmeg
    1 spoon cinnamon
    1/2 spoon salt
    1/2 spoon allspice

    - side cream-
    1 cup cream
    1/4 cup splenda

    Poke holes in squash and cook in microwave until soft.
    Cut in two, and discard the seeds. Spoon out the rest of the squash and put in food processor.
    Add the rest of the ingrediants (without the side cream) in the processor and blend until you've got it smooth.
    Pour the mixture into pie plate and bake for 60-70 minutes at 375 F degrees.
    Can either be served hot with the (cold) side cream, or by itslef.

    Sound very good. Do you know how many carbs in the spaghetti squash?

    Hi Gemstone,

    I think that a cup of Spaghetti Squash contains 5-7 g of carbs.
    So 3 cups should be about 15-20 g.

    P.S.
    I wonder if different types of squash have different ammount of carbs.
